Get some Noopept or some similar nootropic, really does help with retention and whatnot for stuff like that. Also if you're serious either post or PM me some examples of what you're required to know. I have 10+ years of restaurant experience. Are you a server or a cook? -

Expo, might move up to server eventually. Most of the really difficult shit is like "Describe the following appetizers in detail. Include number and garnish." "Name and describe all the numbered sandwiches."Describe in detail the following. Include ounce info and garnish. [names a bunch of dinner items]"
Like fuck, am I just supposed to memorize the 2-3 line description for each thing? At least it's divided into sections for each day, like one day is appetizers, soups, and salads, another day is sandwiches, another day is dinner suggestions, etc. But damn, man -

I wish I had expos like you where I work. The expos I have are dumb as fuck, I can put a shrimp scampi in the window and they go "is that a chicken parmesan?" as if they've never seen food before.
Do you really have that many different items at a kosher deli? A lot of times garnishes and such remain the same throughout dishes, unless the person making your menus is an overreaching idiot. We use parsley for almost all the pasta dishes where I work for example so it's easier to remember. Results may vary of course.
It will get easier as you go. You will memorize the popular/common items from sheer exposure and develop personal memorization techniques for more unusual/less common items. Sounds like your restaurant provides poor training and/or has unrealistic expectations for people in which case I would look elsewhere unless desperate for a job/money. -

Every place i go to like that, the servers are stoned as fuck and always dumb and cant answer questions so im sure its an easy hiring process.
