Those levels are not your 'proteins'. beta-1 is A protein that creates enzymes that do who knows what exactly, but it has nothing to do with eating protein and more to do with the health of your liver. Low levels are a common indicator for things like cirrhosis and apparently some lung diseases.
Eating more protein isn't going to do anything for these levels. They were talking about dietary protein. -

I don't think the Spartans had any special dislike of alcohol outside of the military, they were just really hardcore with every aspect of their training, and you can't have a drunk army.
Watering down wine was really common back in the day because they thought it made water safer to drink. Humans also thought it was healthy for most of history. IIRC they only had an issue with getting drunk if you were younger. It wasn't looked down upon for the elderly to get hammered. It was a sign of social status and masculinity, lol. Hence the term, "Drunk as a lord."
