but yeah, cactus is really good. tastes like green beans when eaten raw, and cooked it has a tangy flavor, and if you put habanaro or jalapeno, with some smoked steak salt and salsa, it rocks. ya gotta get the thin ones though. thick ones have all kinds of fibers that get in your teeth.

Hot tortilla off the grill, cut up nopales, pico de gallo, pieces of grilled carnitas, a bit of limon, salsa, and oh my fuck. You are set.
Although obviously you add as you go and don't throw it all in there at once like a heathen. Taco bites are customizable. -

I imagine it's pretty flavorful. It's the part of the GI birbs/reptiles have but I forget what it does. Generally I think it gets more flavorful as you go deeper. I know a lot of menudo uses the cheap parts like the first stomach of the cow which is the biggest, and it isn't as good as the other more wavy types which gets reserved for carnitas. -
