Your fingerprints could be on the bloody knife handle at the murder scene, but there's a 0.0000000001% chance you just happened to pick up the knife while selling Girl Scout cookies door to door. The door was open a crack, you looked in, saw the body, walked in, bent down, touched the knife momentarily to see what it was, then left to report the murder. It's happened before. Nothing is ever 100% for sure, because there's no way to fully ascertain anything 100%. The best you can do is beyond a reasonable doubt.

    No not at all. They are laws given certain assumptions. For example, Snell's law doesn't hold for a linear birefringent crystal

    You are confusing evidence in jurisprudence with scientific evidence. the latter is absolute, not in proving something in the affirmitive with 100% certainty but it can prove something false with 100% certainty.

    there are many gods and holy books, they cant all be right but they can all be wrong. see how that works?

    thats because its not a law that regulate crystal birefringents. it is known that it doesnt cover crystal birefringements.

    No, it means all laws are built on assumptions. "Assuming W X and Y are true then Z".
