It's because matters of the mind are rooted in physiology/biology just like anything else. "Mind over matter" only goes so far when the drugs have changed your brain on a cellular level. -

For example if I know I'm about to go out and about on the town, and I'm sober, but I know I'm gonna get dumb soon, I get giddy and sort of drunk already. Like, in preparation. I dont mean to but I do.

God knows the names of all the stars because in this context the stars refer to the angels. Lucifer, is sometimes referred to as the Morning Star and in the book of revelations when Satan goes to do the final showdown with God, he marshals a third of all the stars to his cause. Meaning a third of the heavenly host fights on the side of the devil. -
