Dried beans are dirt cheap and easy in a crock pot. Make huge batches at a time and you've got your side dish for every night ready to go for the next 3 days
Frozen veggies, coconut milk, chickpeas, lentils for making curry cheap and easy. Ive found cans of coconut milk at the dollar store for $1.
Use tge beans youve made + kidney beans, canned tomato, carrots, celery, spices, pasta of your choice. Dump it in a crock pot and make 3 days worth of minestrone soup
