What is wrong with the queso?

I have never had chunky queso. Is that how it’s supposed to be? Do you mean like peppers?

wuts that? reminded me of a sauce for beef stroganoff but looks more like potato soup in a pan

I hate Velveeta, and it does look like that. it has that food base plastic look to it. One of the ways to get cheese melted right is a fondu type melting.. takes hours. the other is to heat it slowly for a bit and use like a Bullet processor to blend it and then heat it in the pan again.
also queso is charred a bit on top? they usually take a torch to it then sprinkle cheese.

I put Jimmy Dean sausage and rotel in Velveeta in a crockpot. That’s as historically accurate to queso as we get in this house.

Good Thai has to come from a shit hole. That is just the way. If we Americanized a Thai restaurant it would be pretty and the food would taste like ass.
So I’ll drive for an hour for my coconut milk soup. We make a pretty decent curry too.
