   The dishwasher equipment is next to the kitchen. The bar is not. But even in kitchens there is still a 3 bay sink in addition to the dishwasher for oversized items.
   
   Ever seen behind a bar? Ever heard of the 3 sink method? Wash, rinse, sanitize. It's one of a bartenders tasks. Sending the bar glasses to the automatic dishwasher involves more time, electricity, and labor costs than having a bartender wash the glasses as they come across the bar.
