    The key to making a proper Cornish pasty is getting the pepper just right

    Sweet Red Bean Paste (Anko)

    Ingredients:

    1 cup azuki beans
    1 1/2 cups sugar
    Pinch of salt

    Instructions:

    Rinse azuki beans and soak them in water overnight.
    Drain the beans, then place them in a pot with fresh water and bring to a boil.
    Reduce heat and simmer for about 1-2 hours until the beans are tender.
    Drain the beans, then return to the pot.
    Add sugar and a pinch of salt, and cook over low heat, stirring constantly, until the mixture thickens to a paste.
    Allow the paste to cool before using.

    White Bean Paste (Shiroan)

    Ingredients:

    1 cup navy beans
    1 1/2 cups sugar
    Pinch of salt

    Instructions:

    Soak navy beans in water overnight.
    Drain the beans and remove the skins by gently rubbing them.
    Boil the beans in fresh water until tender, then drain.
    Puree the beans in a food processor until smooth.
    Return the puree to the pot, add sugar and salt, and cook over low heat until it thickens into a paste.
    Cool before using.

    Mooncake with Red Bean Paste

    Ingredients:

    For the dough:

    2 cups all-purpose flour
    1/2 cup golden syrup (or honey)
    1/3 cup vegetable oil
    1/2 teaspoon alkaline water (optional)

    For the filling:

    Sweet red bean paste (anko) from the recipe above

    Instructions:

    In a bowl, mix flour, golden syrup, vegetable oil, and alkaline water to form a dough. Cover and let it rest for at least 1 hour.
    Preheat the oven to 350°F (175°C).
    Divide the dough and red bean paste into equal portions.
    Flatten a portion of dough, place a portion of the red bean paste in the center, and wrap the dough around the paste to form a ball.
    Place the balls into mooncake molds and press to shape.
    Arrange the mooncakes on a baking sheet and bake for 10-15 minutes.
    Remove from the oven, brush with egg wash, and bake for another 10 minutes until golden brown.
    Allow to cool before serving.

    White Bean Pie (Inspired by the Nation of Islam's Bean Pie)

    Ingredients:

    1 cup cooked navy beans
    1 cup sugar
    1/2 cup evaporated milk
    1/4 cup melted butter
    2 eggs
    1 teaspoon vanilla extract
    1/2 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    1 pre-made pie crust

    Instructions:

    Preheat the oven to 350°F (175°C).
    In a blender or food processor, combine the cooked navy beans, sugar, evaporated milk, melted butter, eggs, vanilla extract, cinnamon, and nutmeg. Blend until smooth.
    Pour the mixture into the pre-made pie crust.
    Bake for 45-50 minutes, or until the filling is set and the crust is golden brown.
    Allow to cool before serving.

    Korean Sweetened Red Bean Paste (Danpat)

    Ingredients:

    1 cup azuki beans
    1 1/2 cups sugar
