It's because they can't scale the other side coming down without exposing themselves significantly. You can climb up the one side easily and quickly enough, but then you'd have to dangle from a swinging rope on the inside coming down.

It also affords extra protection from cannonballs. When the cannonball strikes the angled wall from the outside, the projectile is deflected upward and some of its force is reduced, thus making the wall last longer in battle.
