Some Prepaid Visa cards are $20-$500. $500 at 20 stores in a day would be $10k. If the whole thing was set up correctly.

in simplified terms, without explaining the intricacies that would only serve to confuse and obscure...as well as wasting my own time, IT IS NOT POSSIBLE TO STEAL A GIFT CARD
one of the most significant life-lessons that ive learned is the saying 'you can lead a horse to water but you cant make him drink' is absolutely accurate. i know there are high-order dumbassess reading this thread that think the technique listed in the OP is the most brilliant thing since home-made-C4 so i heartily urge these cerebral-dynamos to go right on ahead and try it out. the instructional steps are as simple as it gets. i also urge you to post your findings in this thread once you get out of jail.
stop reading this. go steal a gift card already.

This whole thing would work but it'd require getting the cashier to press the final cash button before giving him/her the cash.
This is exactly how the procedure went when I was in retail and got put on a register...
1. Ring up items
2. Press 'TOTAL' button to calculate the total amount
3. Take cash in hand and add up
4. Press 'CASH' button
5. Enter in the amount of cash I was given
6. Press 'CASH' button again
...At this point the drawer opens and the register displays the amount of change to give the customer. This is also when the card is activated.
7. Put cash in pocket and give customer change.
8. Close drawer which returns register for next transaction.
Somehow the cashier would need to be tricked into pressing that cash button. Maybe as soon as the cashier presses the button, say while looking at phone "Oh NO! My husband already bought the gift cards! Can I cancel the transaction since you still have the cash out?"
The gift cards being the cashiers possession isn't a problem in my scenario, I have that covered.
It's only getting the cashier to actually process the transaction...
