Can any of you make good biscuits?

🇬🇧 UK/Europe:
Biscuit = Hard, crunchy, and often sweet (like cookies or crackers).
Examples: Digestives, hobnobs, shortbread, bourbons.
🇺🇸 USA:
Biscuit = Soft, fluffy, flaky bread, similar to a scone but less sweet.
Examples: Buttermilk biscuits, baking powder biscuits.
🇨🇦 Canada:
Biscuit can mean either the UK or the US version.
Tea biscuit = Similar to the US version (soft and fluffy).
Cookie = Sweet, like the UK biscuit (hard and crunchy). -

I make pretty good buttermilk biscuits by mixing lard, self rising flour and buttermilk. I should probably melt the lard, mix it and let it cool. My grandma taught me with crisco but I tried lard for some reason and it tastes a little like pizza hut deep dish crusts to use goyslop as a reference.
Your grandmother was right. Shortening not lard for biscuits. Even KFC used just what you listed. Flour, buttermilk, and shortening. At least in the 90s when they still made them fresh in the store. -

KFC biscuits suck. The mashed potatoes aren't that great but the chicken makes up for it ig. The fries are pretty good. But Popeyes has better biscuits and mashed potatoes.
They can be good with shortening (the more fat you can get in there the better. I never measure anything) but lard makes it even better. You should try this. -

We need to think up a way to do some kind of online taste test. But my grandmother who taught me, turned out to not know as much about making biscuits as I do so...

Pizza Huts deep dish crust is greasy too. I think I'm onto something with that. It's harder to mix, which shortening isn't easy itself. That's why I said that about melting it.
I need to actually try to measure out both so people can try both and compare. Or you can post your Gma's recipe. -

Just use pastry knives, a set of those can be had for about $10 on Amazon. Personally I use the dough hook on my KitchenAid.
Once the dough is mixed and had a chance to rise I use a rolling pin and shallow greased cookie sheet to roll out a uniform rectangle of dough. Next I use a simple circle cookie cutter to cut out the biscuits.
Do not reroll the left over dough and cut out more biscuits when making buttermilk biscuits. This second run will bake out flat and hard. I cut it into uniform peices, cover it liberally in salted flour, and bag it for use as "dumplings" in a chicken dumpling casserole thing I make. -

2 teaspoons baking powder
¼ teaspoon baking soda
1 teaspoon salt
7 tablespoons Crisco or unsalted butter, chilled in freezer and cut into thin slices
¾ cup cold buttermilk
2 tablespoons buttermilk 2 Teaspoon honey for brushing
I forgot about the brushing. Melt and mix the honey and buttermilk on a low heat then brush the tops of the biscuits before baking at 375 for 10 to 12 minutes.
