Only the back of our eyeball has light projected on and use 3/4the area (the rest is the front where your eyelid is) so it is about 1.5pi radians = 1.5 pi xels. Multiply it by your 360 degrees of eyeball rotation, that is 360x1.5= 480 degrees of rotation. But that is only for a circle. The horizontal resolution is found by rotating this sphere around its axis and this gives you 480p resolution.
The human eye sees with cones. When you project a cone onto a 2D surface, such as the back of our eyeball, it is no longer a 3D come (as it is now a 2D projection): the 2D projection is just some shape of triangle. This is why graphics are rendered as triangles and resolutions generally are multiples of 480p, so you can simply show different 480p images on different parts of the screen and your brain can stitch it together into a contiguous image based on being able to immediately look anywhere on the screen.
The reality is that the human eye cannot perceive over 480p resolution. All you can do is put together 480p images. I have already explained these scientific facts before here in this post:
