Often I'll run it with olive oil, salt, pepper, then use water displacement to vacuum seal the steak in a ziplock with a bay leaf pressing flat against both sides. Leave that in the fridge for a few hours, then just pan seared and oven broil it for a total of ~4 minutes altogether.
Butter is good but it adds the fatty flavor profile that many people don't like.
If you are gonna use butter though, I recommend unsalted, and use it as the actual searing/heat transfer medium. I do this by putting the pat of butter on the side that is going to go face down first, then toss it on to the pan. It liquefies, sizzles and really helps break down and into the meat. Put another pat on the other side, flip.
Honestly though just eat your steak how you enjoy it. Only gays adjust their food preferences to how other people think they should be. -
