   I'm not sure I understand your post tbh. While the restaurant was under no obligation to offer them another side dish, since there was nothing wrong with the first one (she just didn't like it). They were courteous enough to offer another one (many places don't do that.)
   
   It costs nothing to them and it leaves a nice impression to the clientele about the place. This couple would be more inclined to return to that place because the service was good, for example. It's a win win situation.

   One reason could be the quality. Although expensive doesn't always mean great quality (you do pay for the name f the brand as well), it is more often than not. So even if you buy a bit more expensive (a coat or a pair of boots for example)but the quality is good, they will last much longer. Like over 5 or 10 years. So, you might've spent more money in one go but in the long run you haven't actually. It's kinda like an investment.
   My grandfather used to say, I am not rich to buy cheap. He had a point there. lol
   
   I do buy cheap myself, but more like summer clothing. Sometimes sweatshirts or pullover as well, which I may use daily or at home. But when it comes to jackets, coats, shoes. I do like to buy them of good quality.

    The only time I stayed in a resort in Turkey,and it was huge. We were never asked anything neither for breakfast, lunch or dinner. There were lots of people.

    I haven't even followed much this particular case, tbh. Cynical as I am, when it comes to politics and secret services - althought I do like to read about these subjects a lot - I kinda take it for granted that it happens.
