Made some fish tacos with a side chopped salad. Came out alright but I should have put them in the oven instead of pan frying them. Used cod. Salad consists of mushrooms, tomatoes, chickpeas, feta cheese, cucumber, lettuce with vinagtre and oil dressing.
Fish toppings are jalapeño, avocado, tomatoes, onions and cilantro. Got a bed of pesto underneath everything. You can't really see the fish with everything else covering it, so here.
next time use regular corn tortilla and sprits some olive oil on them (you can buy it in a spray can of EVOO)
then put them in the convection oven (we have a toaster oven with convection or air fry) and its so much nicer. you have to experiment with it because each toaster oven is different with air fry but ours is 380 for 3 and a half minutes (but you have to preheat it first) put them on the toaster rack but bend them between the metal bars
I dont like those pre made crunchy ones.
