    Hispanic fish dish where raw fish (in this case flounder) is "cooked" (denaturation) in the acids of lime juice rather than heat.



    This is flounder, onion and cilantro. I am leaving it in there for 4 hours to "cook" in the acidity. I added a little distilled vinegar to lower the pH a bit further, just to make sure it is well cooked and acidic.

    It can be served many different ways but I will serve it with some tortilla chips. My chips of choice are Tostitos Hint Of Lime.
