    Think about how a particular dish symbolizes the culture of the people that make it. Buffalo wings are a pretty "American" food. What is it really? It's the cheapest, least meaty part of the chicken.

    But if you batter it, fry it in fat, roll it in salt and spice and serve it with more salt, we will eat shit by the bucket full.

    You can utilize nearly all of a chicken, including the feathers. Chicken paws, for example, are detested in America but they are a delicacy in China.

    I don't understand how some cultures/people enjoy cartilage and gristle in their dishes. The minute I get to something like that, it pretty much ruins the meal. But I've seen a ton of dishes that are pretty much like 75% cartilage, tossed in sauce and served. Maybe that texture doesn't trigger gag reflex for everyone? Maybe some cultures are conditioned to savor crunchy fat and ligament?

    I remember buying a carry out chicken curry from a backstreet curry house years ago and as he was dishing it up there was a big fucking chicken neck in it, he looked at me to see if I saw it and I met his gaze, "That's really good to eat and full of nutrients" he said "Then take the fucking thing out and you eat it" I responded...he took it out.
