- the energy levels eventually calmed down in their ever going quest to find the lowest energy state to a certain threshhold
- when this threshhold was crossed, the energy was in a certain advantageous position to use natural selection to mold matter (all the objects on earth) into structures that would speed its distribution
- eventually it got really good at molding things and molded humans who then started to intelligently design methods to use energy to their advantage so that they can consume more and more energy themselves thus buying happiness (TM)
- eventually it will be evenly spread and at that point will have no use for us anymore, and we and everyone and everything else will die

Because there seem to be some inconsistencies in your story. For one the 'energy didn't calm down' there is still just as much energy as there was at the big bang it's just more spread out and disorderly. Also the Universe doesn't give a shit about attaining a low energy state it's simply the effect of an expanding Universe. There was no threshold crossed. The way in which the energy is distributed was determined at the moment of the big bang. Pic related.
As the cosmic microwave background is the radiation that was released around 300k years after the big bang when the universe had cooled down enough to become 'opaque' we can derive the properties of the early Universe from it. It illustrates there are some areas with higher and some with lower energy density, this was due to quantum principles at the moment of the big bang. The uneven distribution of energy can be seen in the matter that was formed from the energy as well. Which allowed for the formation of stars under the influence of gravity. Stars fused heavier elements and died, seeding the Universe with the building blocks for planets. Only later generations of stars were able to form planets because in the beginning there was only hydrogen and a little helium.
It's also interesting to note that even without technology most of our energy comes from the sun, since plants use photosynthesis and animals eat plants and we eat animals and plants as well for that matter.
You're right about one thing though, the Universe will expand forever. Which means that in a billion, billion years the only stars we'll be able to see are those of the Milky Way. The big stars will go out and all that will remain will be the low mass stars. And as what remains of any civilisation huddles around the last embers of a dying Universe so must they run out of fuel at some point. And there will be darkness. Not even black holes can escape their fate as they slowly but surely radiate their mass away due to Hawking's radiation and in 100100 years the Universe will be so spread out that the energy density is so low it will be as if the Universe had never existed. And such is the fate of all that is.

What if I told you that our big bang is not the only one. That there are trillions of other big bangs out there we have not yet discovered, each in various states of dispersion?

I would tell you that that certainly would be a possibility but the fact of the matter remains, when our Universe goes dark nothing will be left. We're stuck to our Universe like flies to sticky paper we can't cross over to a more lively one unfortunately.
