   Half the shit in your food doesn't even appear on the ingredients. For instance fruit will be soaked in citric acid to preserve it - doesn't need to appear on the label. Certain doughs (IIRC bagels, etc) will be brushed with sodium bicarbonate solution for texture - again, doesn't need to be labeled. Heat treatment or radiation sterilisation doesn't need to be notified either.
   
   Anyway, some preservatives will be fine. They keep people fresh for longer.
