I don't know how Europe is in this regard, but I imagine it's much the same.
Why does America have so few open air markets? They're one of my favorite things in the world. Lines and lines of stalls, all sorts of foods and smells, huge ass crowds and hustle and bustle. It is such a lively place to be. But it seems like the only open air markets most people go to are the ones at carnivals, and those suck. Corn dogs, cotton candy, pizza, pretzels, nachos, funnel cake, fried shit, it's all GARBAGE. And you can only go there in the summer anyway.
I have been to a more longstanding market in LA, but that's literally the only one I've seen and it was just okay. It was different though. More spread out and less up close and personal, more organized and established. Nobody was yelling at customers to come try their tacos or buy their wallets. Just wasn't the same. I do see a lot of beaches have open air markets during the day, but there isn't the same culture here of going to the market and just walking around to see what there is to eat. People go to those beach markets for the beach, not the food. People pick the shortest lines instead of picking the long lines because they know they have some dank ass food.
The markets I've been to in Mexico in Asia have all sorts of really good fresh food. They're open at least a few times a week if not all week, and there is a much bigger culture of display. Like, I never really see anyone in America cook my food right in front of me as I wait for it. Being up and close to the action is kind of awesome but I'm willing to bed America has some sort of health standard that prevents food being cooked like a foot away from where they're handling money. Also all the seafood/meat that is just left out in the open outside probably isn't very safe either.
Unfortunately though it seems like most countries are trying to stamp out these markets. My favorite market in Mexico no longer exists for this reason, and it's pretty sad. A lot of Asian and middle eastern countries are also trying to clean up in favor of more regulated markets. A lot of these shops in the less organized markets just function illegally and will have lookouts to warn them when the police comes to check for permits.
Just wish there were something similar nearby that I could go to. I could go to the carnival but it's really not what I want. I want to stand in a big line and have somebody cook some meat right in front of me. Put it on a kebab or in a taco or in some rice I do not give a fuck. I just love watching people cook my meal right in front of me.
Guess I could go to a hibachi place or something.

I have absolutely seen open air markets in cold places. Not personally, but I've seen videos on youtube of Eastern Europe and stuff where they have pretty much the same thing as you'll see in Asia.
Doesn't even have to be outdoors or in a stall. I have seen open air markets in buildings that are basically like a giant gaping hallway that they put a gate across at night. In Taiwan I saw people riding their scooters and shit through these places and it was so jarring.
The equivalent in America would be like, the food court at the mall. IDK tho. It doesn't feel as relaxed or casual. I love just wandering aimlessly and looking at all the food and seeing where the good shit is. I like to do one round trip before I actually buy anything.
You can't really look at the food in a mall. It's behind the counter unless it's one of those tray type places where the food is sitting in big bins behind glass.
Shit isn't fresh.

Air markets are a scam. Why would anyone want to go to an air market when air is free?
