Reading these posts automatically lead to a short through train that revealed the clear potential benefits of this.
#1.) Moisture: Giving it time between baking can allow excess moisture to clear up, which can be a large problem for many food items. Moistness and the texture it affects is always a critical element. This could allow for the crisp golden layer that perfects many dishes.
#2.) If the food is allowed to age for short time, particularly during time spent outside the refrigerator, this can increase umami concentrations, allow the flavor to age and develop, despite the short period, because it is a food item that is rapidly decomposed and is not recommended to be eaten if left out for extended periods of time. This utilizes bacteria and undergoes a somewhat similar process to fermented foods, such as sauerkraut and kimchi, which lead to a very large rise in umami-msg concentrations. Wine and beer are other examples, and aging is a standard practiced, extended periods often providing some of the finest quality. Of course cheese is one of the best and most common examples of bacterial utilization, and bulk (not necessarily bad) bought items they use are generally of a quality that leave much to be desired. In particular, mass produced modern cheese is often aged for a relatively short period of time and could use quite a bit more to develop. Tomatoes, also relatively high in umami, particularly when paired with salt.

This is the descent of madness of a man who may be entering a hypomanic stage due to the effects of Prozac. From my autistic trans-dimensional memory I recall his description of his sole experience with SSRIs beforehand many years ago, which gave a strong impression that if they continued to work similarly, which they very well could, would lead to a similar experience.
Don't be afraid to take higher doses, MQ, I want to see where this leads if you are indeed a hyper-responder. -
