    capacitors are the only parts in the microwave that retain power, you should be safe to touch anything else if you pop the caps out first. all of the ones I've got have plastic guards around the terminals too so it's fairly difficult to discharge them by accident.
    
    old crt tvs and monitors though...

    OP: I had the same problem, was able to tear them down into disposable parts with just a leatherman/pair of pliers. it's mostly just bolts and connectors
