they have this thing called wires and can connect to the dish from hundreds of meters away if they wanted.

Apparently this is what a Starlink base station in a rural area looks like. Presumably the ones in Ukraine also have diesel generators.
The network infrastructure (fibre lines) supporting the base stations should be vulnerable too. People forget, Starlink is basically a radio repeater, the satellites don't communicate with each other (although they want to change that). -

Base station and client aren't the same thing.
Starlink satellites basically pick up and reflect the signal from a base station. Every Starlink client needs a base station somewhere nearby, the satellite picks up the signal from the base and relays it to the client. That's why Starlink doesn't work at sea yet. -

I'm guessing human intelligence is playing a bigger part on both sides than anyone is comfortable admitting.
I'd be interesting in finding out what, if anything, SpaceX have done to stop the Ukrainians using Starlink as they see fit. For instance why don't the Ukrainians just use VPNs? -

my understanding was that it was client directly to satelite thing which is why the wok (dish in the west) is pointed into the sky.
