The historical reasons the jedilike religions disfavor pork is because people in places such as China, India, Middle Europe used to use things known as "toilet troughs", wherein human waste was fed to pigs, who were then later slaughtered and eaten. It was an early "folk" attempt at caloric efficiency but resulted in human parasites becoming adapted to and then borne by swine, and becoming transferrable to humans. Even though the ancient peoples had no conception of microscopic parasites and barely thought about the ones they even could see, they could still tell that sometimes plagues could be caused and spread by the consumption of food cultivated using certain practices, just as a matter of inquisitive observation and simple pattern recognition. They might have had no knowledge of the causal mechanism, but they could see the correlation.
The jediian people had strong and long lasting, interconnected community structures through their religious societal fabric and their religious structures, for the longest time, were also their academic structures.
As part of their religious prescriptions, they mandated better health and sanitation practices such as regularly and thoroughly washing as well as not eating certain types of food.
These same norms have pervaded most of Abrahamic societies but in different ways. Christianity also forbids pork and alcohol, Christians just don't give a fuck and make excuses from unjust extrapolations. -
