My work knife I just pull through a little sharpening tool a dozen times or so, I imagine I would want to use a sharpening stone or something for a good knife, how do you do it?

If you have a knife that is really dull you will also need the (not included) diamond or carbide rods as well. Otherwise it comes with a CD and booklet with awesome thorough instructions. Apparently it can sharpen a lot more than just knives, which I have not tested but is awesome nonetheless.

my point is you wont really be able to tell what steel your knives are made of unless you have them lab analysed, or just trust the manufacturers.

i gave it some further reading turns out to be just carbide coated, not really 100% carbide blade.
fucking jedis.
also carbides are easily worked with diamond wheels and sharperners which are easily and widely available today. thanks to china.
