2020-04-17 at 4:45 PM UTCI made some beer bread last weekend with a can of beer that was 2yrs passed it's sellby date (I have about 20 of them in my fridge from before I stopped drinking). It was ok I suppose.
3 cups flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 x 12oz beer
1/2 stick of butter melted.
mix it all up, put in baking container...pour melted butter over the top...bake 375F for 40 mins - 1hr.
Eat it in one sitting and then look in the mirror and say "why why why do you do this to yourself"...while crying.

Yes it rises thanks to the yeast in the beer I suspect..and the baking powder. It's still pretty "heavy" though...not light and fluffy like an angel's pubic hair.
It's better than a kick up the ass though, as me old mum used to say.
Try it if you have the stuff laying around. -
