The purpose of shiphoning is to remove residue. That usually gathers at the bottom. I never heard of anyone siphoning 4 times, and siphoning at all is unnecessary. Usually people siphon when main fermentation is done, then leave the wine to age for a few weeks, and sometimes they'll siphon during this time just to keep the wine clean.
Dead yeast is not dangerous, in fact it's good for you. The only problem is it tastes bad. -
