The fire exit has a delay of 10-20 seconds after sounding the alarm before opening to prevent situations like this. Everyone in the entire store will be alerted to the fact that you are trying to steal. Fire escapes are only a viable option if you're stealing multiple TVs or something and have somebody waiting with a running pickup truck (fake/stolen plates are a must) on the other side.
Instead, just push the shopping cart out the front door. Walmart employees in the U.S., even the LP, are not allowed to physically stop you. If they say anything, call them a faggot and keep walking. Also, this will work multiple times if you wear disguises or even just wait two weeks to a month between lifting visits.
Note that some Walmarts still allow LP to snatch shopping carts/bags with stolen merchandise right out of your hand as long as they don't touch your body. If this happens, run. Alternatively, only walk out with whatever you can hold in your hands so they can't ruin the whole trip by body-blocking your shopping cart (I've never had this happen, but I've heard stories).

You might be reported to the store's ORC investigation people, but unless you're a shoplifting kingpin who makes tens of thousands to millions of dollars stealing and reselling high-dollar items, you don't have much to worry about. If you made it out the door, they're unlikely to do anything about $300 worth of groceries unless it's a low-traffic store in the muddle of rural nowhere or the police are already on premises for another call.
Worst case scenario, they might give your license plates to local PD, so either do this on foot or buy a license plate switcher and steal some plates if you are stealing a lot. However, nobody is going to really care about a couple hundred dollars worth of merchandise.

Too bad they won't be able to do jack shit. They'll ask you nicely if you would like to come to the back room and talk about it. You tell them "no", perhaps offer some advice on how they might better pleasure themselves next time they find the opportunity, and then leave.
In stores where they do allow employees to touch you, you can flash a knife or something and they will immediately disengage. This escalates the charge to armed robbery, however, and the police will respond to that call just about everywhere.

These days, their strategy isn't to keep you from stealing so much as to set up visual deterrents to scare petty thieves and send trained investigators after organized theft rings.
