Growing Pot is going to be an over-saturated market in California and Colorado.
Stick to growing things that cost a lot of money. Avocados. 50 cents a pop to restaurants while 1.00 or more in stores. that's a serious profitable business. the downside is it takes a decade before they fruit. Like 7-8 years.
Cherries are also expensive as fuck. Cherry, Avocados and Pomegranates would probably be the most profitable. Pomegranate seeds are very popular in health foods. Herbs as well. If you're going to just grow around the house for food.. the fastest is Tomatoes, cilantro and peppers and make your own Salsa dip with a baby lime tree next to it. 10 weeks from start to end you have salsa. you can even grow them in your house next to a sunny window.

They are self-pollinating and there's a lot of grafting involved in their production. I'd say growing avocados is a long term investment. Right now there's an avocado fad in USA so there's lots of demand for it, although who knows when that'll end.
