the cheese is called cotija. Basically mexican “cottage“ cheese. Go easyon that shit tho. Itssuper salty. You also need crema to make all tye stuff stick.

word, never new about crema, I'll have to try it out. Yeah and cojita is what I was thinking I was gonna say gouda but that didn't sound right. But yeah I've made them with cojita just parmesan but I guess at food trucks I've had it with cojita.
but yeah this thread has inspired me to eat something in the park today. I bought a lil box of cucumber slices with tajin.
