Not really relevant to chunks of meat...
50lb of solid meat takes up less room than 50lb of cut up meat due to inefficiencies in space usage of the chunks. -

Does sand have air space?
Sand has large air spaces between the particles. Water flows easily through the spaces, so sand does not hold water well.
