   I used to brew my own beer up until I quite drinking. I always had a few bins fermenting...my closet smelled like a brewery though.

   4-5 weeks for the fermentation process in the fermentation bin, then a couple of weeks in the barrel to mature/settle down...I used to leave mine in the barrell/bottles for 3 or 4 weeks though as it improved the flavor.
