   VLC is my video player of choice but I do question its security. How likely could I come across a video that infects me?

   that isn't dependent on VLC, if VLC can be infected any media player you're going to use will.
   Your best bet is to ensure that the source you're getting your videos from is legit and secure, stick to private trackers and video you've ripped yourself.
