Well getting a discount for paying cash (aka getting a kickback for aiding tax evasion) doesn't really require keeping cash on hand. I could go to my bank and withdraw X dollars and pay a tradesman with that.
Also if you get pain in cash you _could_ put it in the bank or buy investments with it. That doesn't mean you have to pay tax on it, it just makes it visible to the IRS. Depending on how much you're going to move through there and how likely you think you are to be audited it may or may not pose a problem. -
