Never used either. The soup is a Bulgarian type and calls for sour milk (or whatever its called idk), but can be substituted with kefir.

The buck knife never rusts. I have not used the damascus one enough, but if my other damascus knife is of any indication, then yeah, it rusts if you leave it wet for a few days. -
