   FYI, French onion soup is predominately beef stock, with browned onions, butter, crispy bread, white wine and melty cheese

   You have to add worchestershire sauce too, and there's usually chicken stock too and red wine is also a better pairing for a beef heavy stock. Asiago and Gruyere cheese is best. Thyme, bay leaves and parsley in the stock after you caramelize the onions. It's one of the few meals I make that doesn't have garlic or chili powder in it

    I use gruyere. I don't remember there being sauce, but I'd have to look at the recipe.

    French onion soup is objectively delicious if prepared properly. I usually just get a baguette to go with it, slice a nice piece and fill it up with cheese, into the oven it goes, then the crispy, cheesy baguette slice is to be served with the soup.
