typically they'll just log changes to a database, there doesn't need to be someone there for you to be able to log in and see if it's been updated in that database yet. -

Many years ago. But I can still file and get sales tax refunds (GST rebate) and a couple other things. I never bothered filing because I didn't have a job, and also because the government gives me all my money so they know exactly how much I'm getting so why bother? $100 checks, that's why bother. -

Big databases are more complicated, they need to be reindexed, cached queries updated, and checks made to ensure consistency. Also drives swapped out if needed. Google Apache Hadoop if interested.
There are also backup jobs that need to be run, and they take a while. The backups are often encrypted, which adds even more time. Sqldumps or netbackup or both.
There are also map reduce big data type operations that can be run as well. -
