   mobile apps? most of them are just a different interface to the same website. companies churn them out because an app has much greater capacity to collect marketable personal information than a web session

   no, (non-tracking) cookies aren't really relevant. mobile apps have requested permissions which usually involve reading various pieces of data on your phone like messages, phone book, social media posts etc.
   
   websites are typically restricted to information about your browser, ie. what sort of device you're using, screen resolution etc.
