Where should I go in Europe?

   I am planning a trip to (ideally) Amsterdam this summer, but that's obviously not the only stop. Was wondering if some of you European niggas could give me advice on where to go in Europe. I'm trying to hit Poland at some point as well.
   
   Things I like: Architecture, Hiking, Food, Cheap prices. Ideally I'll be 'basing' myself out of several cities and exploring the surrounding area for about a week in each city.
   
   Also is it even worth learning French? I hear the French will shit on you whether you speak English or French, unless you're fluent, which my girlfriend is but she probably has an American accent so eh.
