To get a mussel opened, I always found a place where I could insert my knife and worked it to the fat section where I cut the muscle holding the two sides together. After that it was easy to pry the two sides apart. The favorite part to use for bait was the thin sections at the outer portion of the opened shell for sunfish and the big meaty center section for catfish.
