Pineapple Upside-down Cake

   Preheat oven to 350 degrees
   
   Using a cast iron skillet
   
   Place skillet on stove element set at a medium high temperature
   
   Add to skillet 1full stick of butter to melt
   
   To melted butter add approximately 2/3 cups of light or dark brown sugar
   
   Stir brown sugar into melted butter - stirring occasionally
   
   While butter and brown sugar cook prepare 1 boxed cake mix (white or yellow) per box directions for 1 9" cake pan
   
   Set mixed cake batter to side
   
   Stir brown sugar into any remaining butter in skillet and keep stirring as brown sugar begins to carmelize
   
   When caramelization is complete, turn off stove
   
   Open a small can of sliced pineapple and place rings of fruit (5 pieces) in caramelized sugar
   
   Place maraschino cherry in each pineapple hole
   
   Stir cake batter and pour the mixture on top of the sugar, pineapple and cherries in the skillet
   
   Place cake in skillet into oven and bake approximately 28-30 minutes until sides of cake begin to brown and pull away from skillet or when a toothpick, inserted into center of cake comes out clean
   
   Remove skillet cake from oven
   
   Place a cake plate over the top of the skillet and turn over plate and skillet, simultaneously
   
   Gently remove the skillet, allowing carmel topping and fruit to come out of the skillet onto the cake
   
   Serve hot or cooled.
