I'm a big fan of the Xperia series, currently have an X Performance. Not sure you'd be able to get any of the current gen for >200 euro but you could certainly get an X5 or similar

Pretty standard android device so no real difference there, but build quality is nice and they're all (I think) water resistant and fairly tough for a compact device. Hardware, ie. cpu and gpu are fairly standard for their generation.
Also, they have an online service that will give you a code to unlock the bootloader after giving you a bunch of warnings about warranty and stuff, and most of the devices are fairly well supported in terms of unlocking, installing roms, rooting etc. on xda-dev.
There are a few caveats there like having to back up DRM keys and stuff if you flash a new ROM to the phone, but it's a lot to go into and not worth it if you're not into that sort of thing.

I have a Xiaomi Note 5a, it's OK.
The Xiaomi 4A was slightly better imo, the Note is far too big for my hands.
