Because people are retarded. Then once Muslims became more prevalent in the west, someone corrected someone, and out of political correctness, the correction was adopted. Allahu Ackbar sounds just like Allah Ackbar to someone who doesn't know any Arabic. But the latter is the correct form, as Allah means god, hu means he/is, and ackbar means great.
