I don't trust banks or the economy. Then there's the fact that most interest rates for savings accounts are abysmally low and don't come close to keeping up with the inflation rate, meaning you lose money over time. I don't know much about credit unions other than I've heard of them and that some people swear by them being way better than banks. Is that something I should look into instead of opening up a bank account? Are there any other viable and wise alternatives, as far as interest rates that at least keep up with inflation and also more secure for when the economy collapses or some shit? Either for storing money, or places to invest it.

Credit unions typically have much lower fees and higher interest on savings account than banks - I have no idea what options you have available, but a credit union is a good idea if you're just looking to store your pay.

PS I use one, years ago a friend of my mother's signed me onto her company's employee credit union (it's since gone public) - zero bank or transfer fees as long as you keep at least 1k in your account at all times, if it dips below you pay $5 a month to keep the account open

Litecoin is probably a really good bet right now if you want to do more than keep up with inflation. Just be sure to check the going rate every waking moment in the off chance that you lose all your life savings. No biggie.

Banks shouldn't be trusted, no doubt, but that's not really a good reason not to keep your money with them. On the day a big four bank won't honor your deposit you won't need the cash since munitions and medical supplies will be the new primary currency in the world. Credit unions are typically better on interest rates but interest rates are garbage on savings accounts anyway, won't beat inflation in either case. Major banks typically have better ATM availability which is pretty much the deciding criteria for me, although you can find credit unions that will cover ATM fees on other banks up to some amount which is pretty sweet.

I would put some in a bank, some in a credit union, some in cash for emergencies, and the rest in investments

Buy gold or silver coins, or reasonably priced jedielry ie from auction.
Gold and silver is surprisingly fungible for cash, you just need to go to a dealer. If you choose wisely you won't lose much in the transaction.

After club night I know my credit union has me covered. I withdrew $40 to buy a fresh Wu Tang long sleeve and they credited me the ATM fee within 2 business days
