i think these are the sort of thing you're after:
http://owl.phy.queensu.ca/~phil/exiftool/
an excellent platform-independent exif, GPS, IPTC, XMP, JFIF, GeoTIFF, ICC Profile, Photoshop IRB, FlashPix, AFCP and ID3 reading, editing and writing tool of about 4.1mb.
also capable of reading camera maker notes from manufacturers like Canon, Casio, DJI, FLIR, FujiFilm, GE, HP, JVC/Victor, Kodak, Leaf, Minolta/Konica-Minolta, Motorola, Nikon, Nintendo, Olympus/Epson, Panasonic/Leica, Pentax/Asahi, Phase One, Reconyx, Ricoh, Samsung, Sanyo, Sigma/Foveon and Sony.
sadly however, it doesnt addressses my curiosity of whether exif data can be absolutely irreversibly and irrecoverably deleted.

a good example of an exif eraser. however reading a few lines below reveals to the potential downloader that the project is unfortunately currently on hold [for health reasons]and that
Mat only removes metadata from your files, it does not anonymise their content, nor handle watermarking, steganography, or any overly customized metadata field/system. Also please not that MAT does its best to scrub as much metadata as possible, it's not really efficient at scrubbing embedded media inside complex formats. For examples, images embedded inside PDF may not be cleaned!http://www.exiv2.org/
another one of what seems to be excellent exif-related tool. how good is it and what does it actually do ??? IDK becos the basic requirement of using this is scro-tier IQ and the ability to use non-M$ and non-MAC OSes. I can only see tarballs for download.

an outstanding free exif data extractor, modifier and tabulator capable or mass/batch action whilst my curiosity went unanswered.
great piece of software tho.

is a link to a place where people who have issues bitch and moan about their issues.
the correct link appears to be here :

no idea how to download tho.
inspite of your inability to help us, The Methematician and I would like to thank you, for your effort.
