I took these old ass freezer burned lookin chicken pieces and thawed them. Been sitting there for three months in the freezer, figured they would work for fishing.
They looked alright this morning, as good as pale pieces of bone in&skin on chicken can look.
So I hit them with a first part of all purpose flour, it was a whole chicken cuz this is a hispanic neighborhood lol, barely degutted like they left blood on it :/ but w/e. So I rinse the shit, let it go from fridge temp to room temp for 10 minutes or so, pat it dry with paper towels and I rolled it in the flour.
Then it went into a bowl of two eggs I whisked together with a tsp of salt, peppers, lemon pepper, and splash of soy sauce.
Then I dropped it into bread crumbs that I had seasoned (they're plain normally) with abode mexican seasoning and lemon pepper (just a little bit of both, last time I used too much and got rid of the small pieces that were too salty.
I cooked them for 30 or so minutes, i left for twenty minutes cuz i had some shit to do and don't use timers, just my watch and half ass remember the time cooks, i got back and flipped everything, it looked good as fuck, i saw the small pieces like wings and drum sticks were finished, so I pulled them out, I whipped about a half inch of cream cheese, hot sauce, and a half shot of white vinegar together until it was pretty consistent, oh two raw diced teeth (not whole gloves) of garlic in there too, as thin as I can dice them (2mm or so, i don't have good knives that i use for cooking
So at the last two minutes of everything, they got flipped a last time, I layered the sauce on thick and then cut the heat off so they coudl just stay in the decooling oven.

Oh I also dip the gristle pieces in ketchup after i finish the white meat. Pretty fucking good NGL,
I ask my roommate if I should do it again and he showed me we have the more chicken in the freezer.
I like being 6/10 on cooking anything, I avoid using too much salt or extra additional grease and oil.
Spices you can really work, small amount of msg in soy b sauce makes two splashes enhance any meat sauce, anyway yeah good shit
