Elevators primarily were first utilized in Hotels, commonly called a Dumb Waiter (not sure if this is the correct spelling as I've only used it when I worked at a Bed & Breakfast Hotel turned into a Restaurant & Apartments), to bring up food to rich people staying at higher floors.

A large issue was when carrying equisite expensive dishes, the dumb bitch carrying them would jostle as she went up stairs, so food would look like it just went through a bouncy house hurricane. Thus the dumb waiter would be utilized to roll a food cart up to higher floors where the dumb bitch could wheel it to your room and serve dishes that weren't extremely fucked up.

Ironically this process was most commonly used to ELEVATE food to higher floors, as dirty dishes were low priority and would be collected much later, thrown into large bus tubs, and carried down by what we'd call today bus boys, but were referred as a custodial kitchen staff at the time.

This continued well into the 20th century when they began to be installed in taller buildings that weren't just for restaurants, patrons were largely encouraged to walk their fatasses down stairs and take the 'elevators' to go up and not do the arduous process of putting one foot over the other while lifting the body.
