    A 5 minute simmer isn't enough either, it should have gone in at the very start before you even turned on the heat. Any moment beyond that is simply needlessly lowering the flavor potential.

    A simple experiment for you.

    Get a fresh tea leaf, straight from the plant
    Get some crushed dried tea leaves of the same weight as the fresh leaf

    Put both in hot water for 1 min.

    Taste the Teas.

    TELL ME WHICH ONE HAS MOST FLAVOR..IT'S GOING TO BE THE DRIED LEAVES ISN'T IT...NOT THE fresh waxy leaf that hasn't flavor infused the water.

    black pepper is the one dry herb that has different properties. Don't put it in the oven at high heats for long amounts of time or it will turn acrid but you can use it for steak rub or putting in at the end of things.

    marjoram you can use fresh at the start of a pasta sauce and dump in handfuls of the stuff to cut down the acidity
