Caramelized a red onion slowly in 2 tbps butter in pot over low-medium heat then cracked in a shitload of black pepper and roasted it in the caramelized onions for a bit, added the rest of the butter stick, mixed in flour to create a goooy paste that I continued to heat, then added in 2 cups of whole milk, 2 cups of whole cream, a few tablespoons of yoghurt, mixed them in, then 4 cups of strong chicken stock, then a bit more water as I needed

Then tossed in broccoli, carrots, celery, thyme and rosemary and let it simmer for like half an hour

Then mixed in like 16 oz of grated cheddar (don't buy pre grated shit) and about 4oz of mozzarella

    Delish

    Was it ok?

Soups are generally the only food that makes sense to me in terms of being sold dried like this tbh. Although I still wouldn't get such products myself.

    Generally me neither.

But try some of this stuff from Pamera, it's good. That's what inspired me to make my own.

I'm not lactose intolerant but I'm kinda weird about dairy because I find it kinda gross and that's quite a bit of milk and cream for my tastes.

Idk how much they use in panera to be fair. I just riffed off a couple of recipes online. This one being the main one:
